Handful of spinach
1 salmon fillet
¼ small onion, finely sliced
3 sprigs lemon thyme
Small knob butter
1 tablespoon white wine
Pre-heat the oven to 200˚C, gas mark 6.
Cut a square of baking parchment, approximately 60cm, and fold in half.
Place the spinach in the middle of the parchment, lay the salmon on top with a small knob of butter and add the onions slices and thyme to the salmon.
Fold up the sides of the paper and staple 3 of the sides.
In the open end of the parcel, carefully pour in the wine. Seal the final end of the parcel and staple together.
Place on a baking tray and cook in the oven for 15 minutes.
Leave to rest for 5 minutes and then open the parcel and serve.
