1 small banana
2 tablespoons oats
1-2 teaspoons coconut oil for frying
Blueberries and cinnamon to serve
Chop the banana and mash it in a small bowl. Add the egg and oats and whisk together.
Heat the coconut oil in a frying pan and spoon the mixture into the pan in 3 separate portions. When the pancakes bubble (after 1-2 minutes), flip to cook the other side for another minute.
Stack the bananas to serve and finish with a topping of blueberries and a swirl of cinnamon.
