Date and walnut truffles

Makes 12-13 truffles

These truffles are a delicious lunchbox treat! And they come with the added bonus that walnuts are high in antioxidants and are a source of omega-3 fatty acids. Dates provide dietary fibre and potassium.

200g plump dates, stones removed (Medjool dates are definitely best!)
100g walnuts
½ tablespoon almond essence
1 teaspoon cacao powder

Cacao powder
Desiccated coconut
Goji berries
Chopped almonds


Blitz the walnuts in a food processor to get fine crumbs and tip into a separate bowl. Add the dates to the processor with the almond essence and cacao powder and blitz. Return the walnuts and blitz again so that all the ingredients are thoroughly combined.

Roll the mixture into 12-13 balls and then roll each ball in your sprinkles of choice.
