Serves 8-10
These slices are packed with delicious dried fruit and nuts, and are gluten- and dairy-free. Dried fruit is relatively high in natural sugars, and so this is definitely a sweet treat, but with all the additional nutritional benefits of the fruit and nuts it’s one to enjoy and savour over the Christmas period!
275g dried fruit (apricots – halved, raisins, sultanas, cranberries, pitted prunes and dates)
60 g brazil nuts, halved
60g pecans
50g ground almonds
1 teaspoon cinnamon
¼ teaspoon gluten-free baking powder
2 medium eggs
1 tablespoon honey
1 teaspoon vanilla essence
Preheat the oven to 150˚C, 130˚C fan, gas mark 2.
Mix together the dried fruit, nuts, ground almonds, cinnamon and baking powder in a bowl.
In a separate bowl, whisk together the eggs, honey and vanilla essence and add to the fruit and nut mixture.
Line a 2lb loaf tin with greaseproof paper, pour in the fruit and nut mixture and press down firmly.
Bake for 1 ½ hours, remove from the oven and leave to cool in the tin.
