Fruity ice lollies

These homemade ice lollies are great thirst quenchers and have no added sugar. I’ve made three varieties – kiwi and chia, banana and cashew, and strawberry and mint.

Ingredients

(each makes approximately 1 ice lolly)
Kiwi and chia
2 kiwi fruit, chopped
1 teaspoon chia seeds
2 tablespoons coconut water
1 date, chopped

Banana and cashew
1 small banana, chopped
2 tablespoons coconut milk
Half a cup of cashew nuts, soaked for 3 hours or overnight

Strawberry and mint
4 strawberries, halved
6 mint leaves, chopped
2 tablespoons coconut water

Method

Blend all of the ingredients for each variety in a blender until smooth. Fill your lolly moulds, insert the sticks and freeze for a couple of hours or overnight.

To take the lollies out of the moulds, quickly submerge in hot water.
