Makes 4-5 portions
250g rolled oats
100g quinoa flakes
25g unsweetened shredded coconut
100g mixed nuts (I’ve used almonds, walnuts and pecans)
50g mixed seeds (I’ve used pumpkin, sesame and sunflower seeds)
50g coconut oil
1 tbsp honey
1 tsp vanilla
2 tsp turmeric
20g sour cherries
Add all of the dry ingredients listed above (oats – seeds) to a large bowl and mix together.
Melt the coconut oil with the honey, vanilla and turmeric in a saucepan and then pour onto the dry ingredients. Stir together and mix well. (Note, if you’re using a plastic bowl, it will turn yellow with the turmeric and so will a wooden mixing spoon; most of it will wash out, but bear this in mind if you have favourite kitchen items that you’d prefer to keep pristine!)
Spread the mixture evenly on a baking sheet and bake in a pre-heated oven at 180C/ 160 fan/ Gas Mark 4 for 25-30 minutes. Give the mixture a stir after 20 minutes and then return to the oven for the final 5-10 minutes until golden.
Remove the tray from the oven and leave to cool. Mix in the sour cherries and raisins.
Store in an airtight container or jar.
