Tofu, Chia and Berry Pudding

This is a great option if you’re looking for a quick and healthy week-day dessert. Tofu is a good source of protein, calcium and iron and combines to make a creamy pudding with the chia seeds (a good source of fibre plus protein and calcium) and berries (great for providing antioxidants). You can use fresh or frozen berries in this recipe.

Ideally, prepare this dessert before you start cooking your main meal to give the chia seeds a longer time to swell up and form a creamier pud.

Healthy Food


1 packet of silken tofu, drained
1 cup of berries, frozen or fresh
1 teaspoon vanilla essence
1 date, destoned and chopped
1 tablespoon chia seeds.


Put the tofu, berries, vanilla essence and date in a blender and blend together.

Stir in the chia seeds and leave in the fridge for at least 15 minutes.

Serve in small bowls or ramekins.

Tip: You can make this more substantial by layering sliced fruit, eg pear, banana, mango, and topping with the pudding and some crushed nuts.
