1/2 cup oats
1/2 medium courgette, grated (=1 portion veg)
150 ml almond milk
1tbsp protein powder (optional)
1/2 small ripe banana, mashed (= 1/2 portion fruit)
1/2 tbsp almond butter (optional)
Berries to serve (1/4 cup = 1/2 portion fruit)
Add oats, grated courgette, almond milk and water to a small pan, bring gently to the boil and then simmer until most of the liquid is absorbed.
Stir in the protein powder, then add the mashed banana. Cook for a couple of minutes and then stir in the almond butter.
Serve with berries of your choice.
